Epiphany Recipes: Shady Lane Cafe's Salmon Burger with Caper Dill Sauce
This is the next in an ongoing series of tasty recipes from the parish of Epiphany.
If you can't get over to the Shady Lane Cafe in Brownsboro Center, then try their recipe at home. The dill sauce is a great addition. Here's the recipe as it appeared in the Courier Journal.
Shady Lane Cafe's Salmon Burger with Caper Dill Sauce
Serves 4
Salmon burger:
- 1 can salmon, wild preferred if available, 3 or 4 cups when drained and strained (if using fresh salmon, poach it lightly, then when cooled, flake from the skin)
- 2 Tablespoons canola oil, divided (I use olive oil)
- 1 Tablespoon onion powder (I've substituted with onion flakes)
- 1 teaspoon garlic powder
- 1 Tablespoon freshly squeezed lemon juice
- 1 Tablespoon sea salt
- 1/2 cup breadcrumbs
- 1 egg, beaten
- Baby greens for garnish
- Sliced cucumbers for garnish
Caper dill sauce:
- 1 cup sour cream (I've substituted with plain yogurt)
- 1/4 cup mayonnaise
- 1 Tablespoon minced garlic
- 1 Tablespoon fresh chives
- 3 Tablespoons capers
- 2 heaping Tablespoons dried dill
- 1 Tablespoon red wine vinegar
- salt to taste
- dash of hot sauce
Directions:
- Push cleaned salmon tightly against colander to extract all the water.
- Flake salmon, mix well with 1 Tablespoon oil, onion and garlic powder, lemon juice & salt.
- Mix in breadcrumbs and egg until well incorporated.
- Form salmon mix into 1/4 pound patties.
- Heat remaining oil over medium heat in a skillet until shimmery.
- Fry burgers 3 to 4 minutes on each side until nicely browned and heated thoroughly.
For caper sauce:
In a bowl, mix all ingredients well.
- Serve salmon burger on toasted whole-wheat bun or bread of choice.
- Spread sauce on top and garnish with baby greens and sliced cucumbers.
